Bring back the holiday feel with some chocolate crinkle cookies! A chocolate crinkle cookie is a rich, fudgy, delicious cookie rolled in confectioner’s sugar that cracks, or crinkles, when it bakes. These cookies are sure to bring some sweet smiles all around!

Makes 20 cookies.

Ingredients:
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 2 large eggs
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tsp baking powder
- 1/2 cup confectioners sugar (to roll the cookies in)
Directions
Whisk together the flour, cocoa powder, salt, and baking powder in a bowl and set it aside for later
Add the granulated sugar and vegetable oil into a large bowl and beat it on medium-low until it is all combined. Then, add the eggs and vanilla extract and beat on medium-high. Slowly add in the flour/cocoa powder mixture and beat it on medium-low until the consistency is like brownie batter.
Seal the bowl tightly with plastic wrap and refrigerate it for 3 hours minimum, until it is chilled and you can roll it into balls. Once at least 3 hours are up (you can keep it in the fridge for up to 24 hours), preheat the oven to 350ºF
Line a large cookie sheet with parchment paper. Put the confectioner’s sugar on a plate and set it aside
Use a medium cookie scooper to measure the dough into round balls. Roll the dough in the confectioner’s sugar until it is completely covered. Place them 2 inches apart on the baking sheet. Bake for 7-9 minutes, and do not over-bake. Allow cookies to cool and enjoy!
